Rhonda's Yummy Foods: Part 1: Cheesy Broccoli Rice Casserole

Each family gathering means my children will undoubtedly ask for a few things.  Without fail they will ask that my sister make the following items:
-broccoli rice casserole

Each and every one of these things are AMAZING and just part of what makes the table complete.  Here is the first of two posts!  (Jello cake already has a spot on here because we take turns making it for different holidays.)


Cheesy Broccoli Rice Casserole

Ingredients:

  • 1 cup minute rice
  • 1 pkg chopped frozen broccoli 
  • 1 stick margarine 
  • 1 can cream of mushroom soup
  • 1/2 cup Evaporated milk
  • 1/2 lb Shredded Velveeta 

Directions:

  1. Preheat oven to 350°F. 
  2. Cook the broccoli. 
  3. Melt margarine. 
  4. Add everything together. 
  5. Pour into greased casserole dish. 
  6. Bake for 45 minutes
We have made this at the house and added cut up, cooked chicken to it to turn this side dish into a main dish.
