PaPa Joe's No Bake Cheesecake


My dad brought this recipe home from the boat years ago and we have enjoyed it many, many times.  He gets pretty creative with his toppings, like his famous banana split version with bananas, strawberries, pineapple, and chocolate swirls, but I prefer strawberry or just plain.

Put the sweetened condensed milk in the refrigerator so it will be cold when you are mixing it.
Whip the mixture until you just think you can't whip it any longer and then whip it more.  It should form peaks.  (HA!)
If you decide to use pineapple, the acidity of the juice will not let the pie set up very well.

Ingredients:

Filling Ingredients:
  • 1 (8 oz.) pkg. cream cheese, softened 
  • 1/3 cup lemon juice
  • 1 can Eagle Brand milk, chilled
Crust:
  • 1 graham cracker pie crust
Topping:
  • Strawberry, blueberry, or cherry pie filling
Directions:
  1. Mix cream cheese, lemon juice and Eagle Brand milk until smooth and creamy.
  2. Pour into graham cracker pie crust. 
  3. Chill for 6 hours until firm.
  4. Top with cherry, strawberry, or blueberry pie filling or serve plain.
