Corn Casserole aka Corn Pudding


This time of year has me all excited about the flavors of fall and you don't get a better harvest food than corn!  Corn casserole is a new addition to our family Thanksgiving feast, but after bringing it last year, we have all decided it needs to be a staple on our table.  There are many varieties of this recipe, but this simple one is quite delicious, cheap, and easy peasy.  You can easily double or triple the recipe and get the same delicious results.





Ingredients:
  • 1 box Jiffy 
  • 1 can cream corn 
  • 1 can whole kernel corn, drained 
  • 2 eggs 
  • 1 stick butter, melted 
  • 1 Cup Sour cream
Directions:
  1. Preheat oven to 375°F.
  2. Mix all together, adding the sour cream last. 
  3. Pour in 1-1/2 quart casserole dish that has been sprayed with nonstick cooking spray
  4. Bake for 35-40 minutes.  Check to make sure the center is firm.
