Most Delicious Lemon Meringue Pie

  • I got this from one of my students and I LOVED it! If you have ever wanted to make one from scratch, this is the one to make! YUMMMMMM YUMMMMMM
  • Filling
    9" deep dish pie crust 1/2 c cornstarch 1 1/2 c sugar 2 c water 5 egg yolk 1/2 c lemon juice 1 Tbsp lemon peel; grated 2 Tbsp butter
    Mix cornstarch, sugar, water, and egg yolk in sauce pan over medium heat, stirring constantly. Bring mix to a boil, until thick. Then remove from heat, add lemon zest, lemon juice, and butter. Mix thoroughly, till smooth. Pour into warm pie crust.
    Meringue 5 egg whites 3 Tbsp sugar 2 tsp of cornstarch
    Beat 5 egg whites and 3 Tbsp of sugar and gradually add in 2 tsp cornstarch. Mix until thick and spoon meringue over pie. Bake until meringue browns at 375 °F.

Cobbler That Makes Its Own Crust

This is a basic cobbler recipe.  My mother usually makes it with peaches, but you could make it with a variety of fruits.

1 cup of self-rising flour
1/2 cup sugar
1 stick of butter, melted
1 egg
1 cup milk
fruit of your choosing, about the equivalent of a large can of peaches



  1. Mix together all the ingredients.
  2. Spray a square baking dish with nonstick spray and pour the mixture into the dish.
  3. Bake at 350 F for about 40 minutes, but check on it after 30 minutes.  If it is browning and bubbling, it is done!  So Easy!!!

Squash Casserole


This is a great southern treat in the summer.  I love when all the squash plants start blooming because I know this casserole (& fried squash!!!) are just around the corner!

2 c. shredded squash
1/2 tsp. salt
1/4 c. milk
1/4 c. flour
6 round, buttery crackers
1/4 c. diced onion
1/2 lb. of Velveeta cheese


Mix and pour into well buttered casserole dish.  You can top with additional crackers, if desired.

Bake at 350 F until brown.  (Check it at about 30 minutes, but leave longer, if needed.)

Mexican Chicken Casserole


This is also called Doritos Chicken or Rotel Chicken.  


  • 1 Can Cream of Chicken Soup
  • 1 Can Cream of Mushroom Soup
  • 1 Can of Rotel
  • 1 Deboned chicken  (I usually boil chicken thighs and debone them.)
  • 1 Hot pepper, chopped fine
  • 1 Small onion, minced
  • 1 Pkg Doritos chips (regular nacho cheese in the red bag)
  • 1 Cup shredded cheddar cheese


*possible stir in ideas:  a can of corn, a can of black beans, or some mushrooms


  1. Mix together soups, rotel, chicken, pepper, and onion.
    • I usually use broth from where I boil the chicken to wash out the soup cans and add that to the mix, too.  
    • You would not want very much; about 1/2 c at most.  
    • Stir in half of the cheese.
  2. Crush up the chips.  
    • This is easiest done in the bag.  
    • Spread half of the chips into the bottom of your casserole dish.  
    • A 9x13 pan is a great size for this.  
    • Pour the soup mixture on top of the chips.  
    • Top with the remaining cheese and then chips.
  3. Bake in the oven at 350 F for about 30-40 minutes, or until the top looks brown and bubbly.

Pecan Pie

Here's the basic ingredients list.  

1 stick melted butter
1 c. sugar
1 c. butter flavored pancake syrup
1/4 tsp of salt
1 tsp vanilla extract
3 eggs
1 prepared pie crust(deep dish style crust or you might have a little too much filling.)
1 c. Pecans or Enough Pecans to cover the bottom of your pie shell.

You beat the 3 eggs well in a medium/large bowl, mix in the salt, sugar, and pancake syrup. Mix well, then slowly add the melted butter a little at a time to the egg mixture. Finally add the vanilla. Arrange the pecans in the bottom of your pie shell and then pour the syrup mixture over the top of it. Put it into the preheated oven.  Bake in preheated oven for 45 to 50 minutes, or until filling is set. I promise this is the best pecan pie you'll ever eat!!

Sausage Balls


Moist and Yummy Sausage Balls!

Ingredients:
1 lb sausage, uncooked 
8 oz cream cheese, softened 
1 1/4 cups Bisquick
4 oz cheddar cheese, shredded 

Preheat oven to 400F. 
Mix all ingredients until well combined. 
Roll into 1" balls and place on baking sheet.
Bake for 20-25 minutes.

You can freeze these, uncooked, but you will need to add a few minutes to the cooking time.  Enjoy!

Jello Cake

This little treat is a holiday favorite.  This picture here is cherry and lime for Christmas, but have fun mixing and matching flavors!  (Think Strawberry and Blue Raspberry for July 4th!)


Wontons aka Crab Rangoon

I don't mean to toot my own horn here, but I make awesome homemade Chinese food. My egg rolls are in another post (check them out!) This time I present wantons. Fast. Easy. Yummy. Need I say more?

8 ounces cream cheese
8 ounces fresh, flaked crab meat (can be imitation)

1/2 teaspoon  Worcestershire sauce
1/2 teaspoon soy sauce
1-2 green onions, finely sliced
1 large clove garlic, smashed, peeled, and finely minced (I keep a jar of crushed in the fridge & eyeball it.)
1 package won ton wrappers
1 small bowl with whisked egg
Oil for deep-frying, as needed (we use the deep fryer)

Assembly:
Mix first 5 ingredients.
Place small spoonful into center of won ton.
Brush egg on edges.
Fold and Seal

Cooking:
These little treats are delicious when fried.  (Imagine that... A southern woman liking fried foods.)
We fried ours up in the deep fryer until they are golden brown.

Serve with sweet and sour!
